Pumpkin pie: Cut pumpkin into pieces Remove seeds and peel Put into sauce pan with 1/4 cup of water Cover and simmer until very tender Strain through food mill or put in food processor For 10 inch pie 1&1/2 cups pureed pumpkin 3 tablespoons melted unsalted butter 1/2 cup sugar 1/4 cup maple syrup 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves 3 eggs separated 1/2 cup milk 1/4 cup heavy cream Combine all ingredients, except egg whites Beat egg whites until stiff but not dry Fold egg whites into pie mixture Pour mixture into pie shell Bake @ 350 degrees or until tooth pick comes out clean, about 50 minutes Pumpkin seeds Wash seeds in colander, pat dry Spread seeds on cookie sheet Salt ( and pepper) and butter spray Bake about 20 minutes Kids love them & nutritious too!
